800 Pounds of Butter Arrives in Syracuse Ahead of 56th Annual Butter Sculpture

The New York State Fairgrounds has seen over 800 pounds of butter arrive for construction of the 56th Annual American Dairy Association North East Butter Sculpture.

Sculptors Jim Victor and Marie Pelton arrived alongside the butter over the weekend to begin constructing Central New York’s secret attraction. The butter, which comes from O-AT-KA Milk Products out of Batavia, is from a supply that has been pulled from retail shelves for a variety of reasons, so it is used in the sculpture as to not go to waste. After the Fair’s 13-day run, the butter will be returned to Western New York and converted into renewable energy at Noblehurst Farms’ recycling program.

“Every year, the iconic butter sculpture puts the spotlight on our state’s amazing dairy industry,” said John Chrisman, CEO American Dairy Association North East. “This work of art pays tribute to the hardworking dairy farmers of New York who work every single day to responsibly produce nutrient-rich milk, an excellent source of vitamins and minerals.”

The newest Butter Sculpture will be unveiled by the American Dairy Association North East on August 20th, one day before the fair officially opens its gates. It will be on display at the Dairy Products Building for the entirety of the Fair.
